This is one tasty whisky apricot cocktail, you guys. Anyone who knows me will tell you that I am a whisky girl, through and through. When given a choice, I will always pick whisky cocktails over any other beverage (save for an occasional glass of red wine). My only qualm is that there isn’t much variety when ordering a whisky-based cocktail at bars. Most only serve the classics: a whisky sour and the perennial old fashioned. And don’t get me wrong, I’d drink either one of those beverages any day of the week, but sometimes you just want a bit more from your whisky drink.
This little drink could not be simpler to make. You probably already have all the ingredients in your fridge – all you need is some club soda (sparkling water is a nice substitute), some apricot jam, your favorite whisky and an optional sprig of fresh thyme. And don’t think that you have to save this one for the evening just because there’s whisky involved – Sebastian and I shot these photos in the morning and had a few sips with breakfast, and it turns out that this is a great cocktail for a slightly boozy brunch. Maybe it’s the sweetness of the jam, but you can drink this cocktail at pretty much any time of day.
What You Need – Whisky Apricot Cocktail
1 shot good whisky or scotch (the better the whisky, the better the cocktail).
1 spoonful apricot jam or preserve
1/4-1/3 cup Club Soda
Fresh Thyme Sprig for garnishing
In a whisky tumbler or collins glass, mix apricot jam and whisky together with a spoon until the jam starts to dissolve. Add a generous amount of ice and stir. Add club soda until liquid is 1/4 inch from the top of the glass. Add optional sprig of thyme for garnish.
