Pomegranate Spice Cocktail

Pomegranate Spice Cocktail

Happy (almost) weekend, ya filthy animals! This week, right? More like this month. Or this year. Any way you slice it, the world has definitely been going through a rough patch recently. I don’t know about you, but I’m tired today. And not just I-didn’t-sleep-last-night tired. I’m tired to my bones. I’m experiencing the kind of exhaustion where I could literally lay down on the floor of my office right now and take a nap. It’s that bad.

I stumbled upon this pretty little cocktail as I was procrasti-working earlier this week, and I must say, the concept looks positively charming. You could basically whip this guy together with the ingredients you have in your fridge, and in about 15 seconds you’ll have a delightfully fruity beverage to soothe what ails you. And, added bonus, it’s absolutely delicious. I know, because I made it yesterday and it was the bees knees.

Pomegranate spice cocktail

Like all many cocktail recipes, this one comes to you directly from HonestlyYUM and is perfect for the first couple of days of March (almost spring! ALMOST SPRING!). I don’t know about you, but I’ll be drinking this guy and channeling warmer climes all weekend. Recipe below – enjoy!!

POMEGRANATE SPICE COCKTAIL FOR SPRING

Ingredients:
1 1/2 oz vodka
1 oz pomegranate juice
1/2 oz lime juice
1/2 oz vanilla cardamom syrup
dash of Fee Brothers Whiskey Barrel-Aged Bitters
sprig of mint and pomegranate seeds for garnish

Vanilla Cardamom Syrup:
1/2 cup sugar
1/2 cup water
1 teaspoon vanilla extract
6 cardamom pods

Directions
Fill your glass with ice and add the vodka, pomegranate juice, lime juice, vanilla cardamom syrup, and bitters.

For the Vanilla Cardamom Syrup:
Crack open the cardamom pods and grind the seeds using a spice grinder or mortar and pestle. Let cool to room temperature, then strain through a fine mesh strainer.

I was just saying to my partner yesterday, “you know that tired in your bones feelings…” so I hear ya. Cocktails make things better though! This one looks yum, I might give it a try.

I’m STILL feeling that way… I’m thinking it has something to do with this neverending winter we’re experiencing. This cocktail definitely livens things up a bit – let me know what you think!!
